  • For Topping: ¼ cup melted butter, ½ cup sugar, 1 tablespoon cinnamon

  1. In a saucepan over medium heat, bring apple cider to a boil, then reduce to simmer until reduced by half (20-30 minutes). Allow cooling.
  2. Preheat oven to 350°F. Grease a 9×5 loaf pan.
  3. In a bowl, cream together butter and brown sugar until light and fluffy.
  4. Beat in egg and vanilla until well combined.
  5. Add dry ingredients and reduced cider; mix until just combined.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a tester comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a cooling rack.
