  • ½ cup unsalted butter, softened

  • ¼ cup light brown sugar, packed
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar

  • ½ teaspoon baking soda
  • 2 tablespoons sugar for coating
  • ¾ teaspoon nutmeg
  • ½ teaspoon allspice
  • ¾ teaspoon cinnamon

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it thickens to half its volume. Let it cool.
  2. In a mixing bowl, cream together softened butter, sugar, and brown sugar until fluffy. Add the egg and cooled apple cider reduction; mix well.
  3. In another bowl, whisk together flour, cream of tartar, baking soda, salt, nutmeg, allspice, and cinnamon. Gradually combine with wet ingredients until just mixed.
  4. Chill the dough for about 30 minutes.
  5. Preheat the oven to 350°F (175°C). Roll tablespoon-sized dough balls in a mixture of sugar and spices before placing on parchment-lined baking sheets.
  6. Bake for 12-15 minutes until the edges are golden but centers remain soft.
