  • 4 cups French bread, cubed
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 3 tablespoons maple syrup
  • 1/3 cup chopped pecans
  • 2 ½ tablespoons light brown sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon corn starch
  • 2 tablespoons water
  • ¼ teaspoon vanilla
  • 2 tablespoons melted butter

Instructions

  1. Prepare the Apple Filling: In a saucepan, combine chopped apples, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and water. Cook over medium heat for 5–10 minutes until slightly softened. Set aside to cool.
  2. Soak the Bread: In a bowl, whisk together eggs, milk, cream, light brown sugar, vanilla extract, and spices. Pour over the bread cubes and let soak for 15 minutes.
  3. Make the Pecan Topping: Mix melted butter with maple syrup and pecans in a small bowl.
  4. Assemble & Bake: Preheat oven to 350°F (175°C). Line muffin pan with parchment paper. Fill each cavity with soaked bread mixture and press down lightly. Spoon cooled apple filling into each cup and top with pecan mixture. Bake for 22–25 minutes until golden brown.
  5. Serve & Enjoy: Let cool slightly before serving warm drizzled with extra maple syrup or whipped coconut cream if desired.
