  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In another bowl, beat butter with granulated and brown sugar until fluffy.
  4. Add egg and vanilla; mix until combined.
  5. Gradually add dry ingredients to wet mixture, mixing until just combined.
  6. Fold in chopped apples gently.
  7. Roll tablespoon-sized dough balls in a cinnamon-sugar mixture and place on the baking sheet.
  8. Bake for 8–10 minutes or until edges are golden and centers remain soft.
  9. Allow cooling before serving.
