  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  2. Preheat the oven to 375°F (190°C) and prepare a baking pan.
  3. Mix flour, sugar, baking powder, and salt; cut in cold butter until crumbly.
  4. Press about two-thirds of the mixture into the pan; spread cooled apricot filling on top.
  5. Crumble remaining shortbread mixture over filling and bake for 30-35 minutes until golden.
  6. Cool completely before slicing into bars.
