  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz button mushrooms
  • 2 Tbsp butter
  • 1/2 cup shallots
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • Fresh thyme leaves
  • 1 cup jarred pesto sauce
  • Cheese of choice (like Green Pesto Gouda)

Instructions

  1. In a large bowl, mix bread flour, garlic powder, salt, and yeast. Gradually add warm water while stirring until shaggy dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in an oiled bowl and let rise in a warm spot for about 1 hour until doubled.
  3. While the dough rises, sauté sliced mushrooms in butter over medium heat until softened. Add shallots and garlic; cook until fragrant. Stir in apple juice and thyme; season with salt and pepper.
  4. Preheat your oven to 475°F (245°C). Punch down the risen dough and divide it into four portions. Roll each into a flat circle on parchment paper, spread with pesto, top with sautéed mushrooms, and sprinkle with cheese.
  5. Bake for about 10-12 minutes until golden brown.
