  • 1 tablespoon olive oil spray
  • 3 shallots, finely diced
  • 1 carrot, finely diced
  • 2 small stalks of celery, finely diced
  • 3 cloves garlic, crushed
  • 400g extra lean ground beef
  • ½ tablespoon dried mixed herbs
  • 400g canned chopped tomatoes
  • 3 tablespoons tomato paste
  • 240ml chicken or beef stock
  • 500g gnocchi
  • 120g grated mature cheddar cheese
  • Salt and black pepper

Instructions

  1. Spray a frying pan with olive oil and sauté shallots, carrots, and celery until softened (about 5 minutes).
  2. Add garlic and ground beef; cook until browned.
  3. Stir in herbs, chopped tomatoes, tomato paste, chicken or beef stock, salt, and pepper. Simmer for about 20 minutes.
  4. Add gnocchi to the sauce and simmer gently for an additional 5–8 minutes until cooked through.
  5. Transfer mixture to a baking dish and top with grated cheddar cheese.
  6. Broil for about 4 minutes until cheese is melted and golden.
  7. Serve hot with torn basil leaves on top.
