  • 12 ounces jumbo pasta shells
  • 1 pound fresh spicy sausage (casing removed)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup shredded cheese (Cabot Mac 'n Cheese)
  • 1/2 cup shredded cheddar cheese (Cabot Seriously Sharp)
  • 4 sage leaves, roughly chopped

Instructions

  1. Preheat oven to 375°F (191°C) and prepare a 9×13-inch casserole dish.
  2. Cook pasta shells in boiling water for 7 minutes; drain and place in an ice bath.
  3. In a skillet, brown the sausage over medium-high heat, adding broccolini until softened. Let cool slightly.
  4. In the same skillet, combine pumpkin puree, water, ricotta, and nutmeg; stir until bubbly. Mix in both cheeses and sage until melted.
  5. Pour half of the sauce into the casserole dish. Fill each shell with the sausage mixture and place them in the dish.
  6. Top with remaining sauce and extra cheese; bake for 15-20 minutes until golden brown.
