  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper until soft.
  3. Stir in chopped spinach and cook until wilted; season with garlic powder, salt, and pepper.
  4. In a bowl, whisk together eggs, milk, and cottage cheese; add Italian seasoning.
  5. Combine the sautéed vegetables with the egg mixture; fold in shredded cheese.
  6. Pour the mixture into a greased 9-inch pie dish.
  7. Bake for 40–45 minutes until golden brown on top and set in the center.
