  • 12 oz turkey sausage, sliced

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 3 (15 oz) cans white beans (cannellini or great northern), drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened (about 5-7 minutes).
  2. Add sliced turkey sausage and minced garlic; cook until the sausage is browned.
  3. Pour in chicken broth and add white beans, smoked paprika, thyme, and bay leaf. Bring to a gentle boil then reduce heat to simmer for about 20 minutes.
  4. For a creamier texture, blend part of the soup with an immersion blender if desired. Stir in heavy cream if using and season with salt and pepper.
  5. Remove bay leaf before serving. Ladle into bowls and garnish with fresh parsley.
