  • 150 g linguine
  • 1 cup cooking cream
  • 1/2 tsp crushed black pepper
  • 1/3 chicken stock cube
  • 1/2 tsp dried basil leaves
  • 1 cup baby spinach
  • 2 tbsp pine nuts
  • 1/4 cup Parmesan cheese (grated plus extra for topping)

Instructions

  1. Cook linguine according to package instructions; reserve some pasta water.
  2. In a large pan, heat olive oil over medium-high heat, then sauté sliced mushrooms until golden brown.
  3. Add minced garlic and sauté for 2 minutes.
  4. Pour in cooking cream, add crushed black pepper, crumble chicken stock cube, and stir in dried basil. Simmer for 4-5 minutes until slightly thickened.
  5. Stir in grated Parmesan until melted.
  6. Combine cooked linguine with the sauce, tossing gently to coat.
  7. Fold in baby spinach until wilted.
  8. Toast pine nuts in a separate pan until golden brown.
  9. Serve pasta topped with toasted pine nuts and extra Parmesan.
