  • 15.87 oz mascarpone cheese
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 tsp pumpkin pie spice
  • 1/4 tsp kosher salt
  • 2 cups heavy cream (cold)
  • 28 ladyfingers
  • 2 cups coffee (espresso or strong coffee)

Instructions

  1. Brew 2 cups of strong coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, granulated sugar, brown sugar, pumpkin pie spice, and salt; blend until smooth.
  3. Mix in pumpkin puree until fully incorporated.
  4. Whip heavy cream until thick peaks form; fold into the mascarpone mixture.
  5. Dip ladyfingers into the cooled coffee for 1-2 seconds and layer them in a baking dish.
  6. Spread half of the cream mixture over the ladyfingers and repeat with another layer of dipped ladyfingers.
  7. Use any remaining cream to pipe dollops on top.
  8. Chill in the refrigerator for at least 4 hours or overnight before serving.
