  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Corn tortillas
  • Oil for frying
  • Cilantro and diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for 15 minutes until softened. Blend with onion, garlic, and diced tomatoes until smooth.
  2. Place the beef chuck roast in the crock pot and pour the chili mixture over it. Add beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper.
