  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tbsp Flour + 3 tbsp water (for béchamel)
  • 1 tsp Sugar
  • 1 tbsp Garlic Powder
  • 1 tbsp Smoked Paprika Powder
  • 1/2 tsp Nutmeg

Instructions

  1. Slice the onions thinly. Heat olive oil in a skillet over medium heat, add onions, and caramelize for 30–40 minutes until golden brown.
  2. Stir in beef broth if sticking, simmer until perfect.
  3. In the same skillet, make béchamel by whisking flour into melted butter (or olive oil). Gradually add heavy cream until thickened.
  4. Mix in two-thirds of the caramelized onions and season with salt, pepper, chopped parsley, and Parmesan cheese.
  5. Cook cavatappi macaroni until just shy of al dente; combine with the sauce.
  6. Pour into a baking dish; top with remaining onions and breadcrumbs. Bake at 350°F (175°C) for 10–15 minutes until golden.
