  • 2.53 kg (56 lb) bone-in turkey breast, skin on
  • ½ tsp salt
  • Black pepper
  • Fresh herbs (rosemary, sage, thyme)
  • 12 garlic cloves
  • 150 g (5 oz) unsalted butter, softened
  • Additional seasoning ingredients (salt, pepper, fresh parsley)

Instructions

  1. Remove the turkey from the fridge 45 minutes before cooking.
  2. Preheat your oven to 200°C (390°F).
  3. Place smashed garlic and herbs in a baking dish.
  4. Mix together butter with minced garlic and chopped herbs.
  5. Loosen the skin of the turkey and rub two-thirds of the butter mixture underneath.
  6. Flip the turkey and smear remaining butter on top.
  7. Roast skin-side up on top of garlic and herbs until cooked through.
