  • 2 medium zucchinis (about 2 lbs), sliced into 1/2" rounds
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 lb lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (28 oz) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice zucchinis into rounds and sprinkle with salt; let sit for 15 minutes to draw out moisture.
  3. Rinse zucchini and pat dry. In a skillet over medium-high heat, sauté onions in olive oil until soft (about 2 minutes). Add garlic and cook until fragrant.
  4. Add ground beef to the skillet; cook until browned and fully cooked through (about 5 minutes).
  5. Stir in drained diced tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  6. In an 8×8-inch baking dish, layer half of the beef mixture, followed by half of the zucchini slices and half of the cheese. Repeat layers.
  7. Bake for about 20-25 minutes or until the cheese is melted and slightly browned.
  8. Let cool for 10 minutes before serving.
