  • 175 g Baking spread (or unsalted butter)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. In a large bowl, beat the baking spread and caster sugar until light and fluffy.
  3. Whisk in eggs and vanilla until combined.
  4. Gently fold in the self-raising flour, then stir in black food coloring.
  5. Divide batter among cases and bake for 25–30 minutes until cooked through. Cool completely on a wire rack.
  6. Create holes in the cooled cupcakes; fill with green-tinted custard.
  7. Prepare the buttercream by mixing softened butter, icing sugar, milk, green, and yellow food coloring until smooth.
  8. Decorate cupcakes with the vibrant buttercream, candy eyes, and sprinkles.
