  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined. Fold in chocolate chips.
  2. Line a cutting board with parchment paper and transfer the cookie dough mixture onto it. Press down to flatten to about 1/2-inch thick.
  3. In a small bowl, melt remaining chocolate chips with coconut oil in the microwave until smooth.
  4. Pour the melted chocolate over the pressed cookie dough layer and sprinkle with flaky sea salt if desired.
  5. Chill in the freezer for about 10 minutes until set. Cut into chunks and enjoy!
