  • 4 cups cooked and cubed chicken (rotisserie or breast)
  • 3/4 cup no added sugar marinara sauce
  • 1 tbsp Italian seasoning
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 tbsp almond flour
  • 3/4 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup finely crushed parmesan crisps (or beef rinds)
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350 F (175 C).
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute).
  3. Stir in Italian seasoning, marinara sauce, almond flour, and cubed chicken. Cook for about 5 minutes until flavors meld.
  4. Transfer mixture to a greased 9” x 13” casserole dish, ensuring even distribution.
  5. Layer with parmesan cheese, followed by mozzarella cheese and crushed parmesan crisps.
  6. Bake for 25-30 minutes until heated through and cheese is melted.
  7. Let cool slightly before serving.
