  • 4 salmon fillets (5 oz each), skin removed
  • 1 1/2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, finely chopped
  • 2 teaspoons lemon zest
  • 1/2 pound asparagus, trimmed
  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch mixed with 2 teaspoons water

Instructions

  1. Preheat your oven to 425°F (220°C). Season salmon fillets with salt and pepper.
  2. In a bowl, mix ricotta, Parmesan, basil, lemon zest, and seasoning until well combined.
