  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (red or yellow), diced
  • 1 small zucchini, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • Fresh parsley, chopped
  • 1 tbsp fresh lemon juice

Instructions

  5. Stir in cherry tomatoes and kalamata olives; let cook for another 2 minutes.
  6. Remove from heat; mix in parsley and lemon juice before serving.
