  • 1 cup walnuts (finely chopped)
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter (melted)
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 (8 oz) cream cheese (room temperature)
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T. salted butter (softened)
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine walnuts, almond flour, sugar, and melted butter for the crust. Press into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then set aside part of this mixture.
  4. Mix pumpkin puree and pumpkin spice into the reserved cheesecake mixture. Pour the plain mixture over the crust, followed by the pumpkin layer.
  5. For the streusel topping, mix sugars, oats, flour, softened butter, and vanilla until crumbly. Sprinkle over the cheesecake layer.
  6. Bake for 60-70 minutes until set but slightly jiggly in the center. Cool and chill for at least two hours before slicing.
