  • ½ cup melted butter (or vegetable oil)
  • ¾ cup granulated sugar
  • 1 large egg (or flaxseed meal for vegan option)
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ cup melted butter
  • ¼ cup brown sugar
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 2–3 Tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, melted butter (or oil), sugar, egg (or flaxseed mixture), and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Fold dry ingredients into wet ingredients until just combined; avoid overmixing.
  5. For the swirl, mix melted butter, brown sugar, and cinnamon in a small bowl.
  6. Fill muffin cups halfway with batter; add a spoonful of the swirl mixture and top with more batter. Lightly swirl with a toothpick.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Drizzle with glaze made from powdered sugar, vanilla extract, and milk after cooling slightly.
