  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted (for topping)
  • 3/4 cup heavy cream (for filling)
  • 8 ounces cream cheese, softened (for filling)
  • 1/4 cup maple syrup (to taste, for filling)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a bowl, whisk together vegetable oil, granulated sugar, and brown sugar until smooth. Add pumpkin puree, eggs, vanilla extract, and milk; mix until just combined.
  3. In another bowl, combine flour, baking soda, spices, and salt. Gradually fold into the wet mixture until just blended.
  4. Pour batter into a greased muffin tin, filling each cup three-quarters full.
  5. For the topping, mix granulated sugar and cinnamon together. Sprinkle over muffins before baking for about 20-24 minutes.
