- 1/3 cup pumpkin puree
- 1 egg yolk
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour

- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
- 4 oz cream cheese, softened
- 2 tbsp unsalted butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- Pinch of salt
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- In a large bowl, cream softened butter with granulated and brown sugars until fluffy.
- Mix in pumpkin puree, egg yolk, and vanilla extract until combined.
- In another bowl, whisk together flour, baking powder, salt, and spices.
- Gradually add dry ingredients to wet mixture; stir until just combined.
- Scoop dough onto prepared sheets, spacing evenly.
- Bake for 10–12 minutes until edges set; cool on wire racks.
- For frosting, beat cream cheese and butter together; mix in powdered sugar and vanilla until smooth.
- Frost cooled cookies generously.
