  • 12 ounces Andouille sausage or turkey sausage
  • 1 large yellow onion, diced
  • 2 celery ribs, diced
  • 1 small red bell pepper, diced
  • 6 cloves garlic, minced
  • 6 cups low sodium vegetable broth
  • Fresh parsley and green onions for garnish
  • Cooked long grain brown or white rice

Instructions

  1. Soak the red beans in water overnight.

  3. Remove sausage and sauté onions in the same pot until softened.
