  • 2 pounds red potatoes (washed and cut into quarters)

  • 3/4 cup half and half

Instructions

  1. Preheat your oven to 375°F. Cut off the top 1/4 inch of the garlic head, wrap it in foil, drizzle with olive oil, and roast for about an hour.
  2. In a large pot, cover quartered potatoes with cold water and add salt. Bring to a boil and simmer until fork-tender (about 15 minutes).
  3. Drain the potatoes and return them to the pot with squeezed roasted garlic cloves.
