  • 12 large baking potatoes (washed and cubed)
  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cube the washed baking potatoes and toss them with 1 tablespoon olive oil, salt, pepper, thyme, and oregano.
  3. Spread seasoned potatoes on a parchment-lined baking sheet. Place the feta block in the center and add the sliced garlic.
  4. Drizzle with remaining olive oil and squeeze lemon juice over everything.
  5. Roast for about 50 minutes until tender and golden brown, stirring halfway through.
