  • 1 cup unsweetened shredded coconut (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat your oven to 400°F and toast 2/3 cup of shredded coconut on a baking sheet for 5-10 minutes until golden brown.
  2. In a food processor, blend pitted dates, almond butter (if using), toasted coconut, 1 tablespoon of chocolate chips, sea salt, and vanilla extract until a dough forms.
  3. Incorporate the remaining chocolate chips into the mixture by hand.
  4. Roll the dough into 1-inch balls and coat each ball in leftover toasted coconut.
  5. Store in an airtight container in the refrigerator for up to 1-2 weeks or freeze for up to three months.
