  • 4 large russet potatoes
  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ¾ cup frozen peas
  • ½ cup milk
  • 2 tablespoons butter
  • Optional: ½ cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick with fork, rub with olive oil and salt. Bake for 45-50 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Cook ground beef or lamb until browned. Add onion, carrots, and garlic; sauté until softened.
  3. Stir in tomato paste and broth; season with thyme, rosemary, salt, and pepper. Simmer for 10 minutes.
  4. Slice tops off baked potatoes; scoop out insides into a bowl. Mash with milk, butter, garlic powder, salt, and pepper.
  5. Fill each potato with meat mixture and top with mashed potatoes; sprinkle cheese if desired.
  6. Return to oven for another 10-15 minutes until golden.
