  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Prepare the sweet potatoes by peeling and cubing them, then boil until tender.
  2. In a large bowl, combine cooked sweet potatoes with olive oil, almond milk, vanilla extract, brown sugar, maple syrup, cinnamon, nutmeg, allspice, and raisins.
