  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • Garlic powder
  • Cumin
  • Paprika
  • Chili powder
  • Fresh cilantro
  • Lime wedges
  • Avocado slices

Instructions

  1. Prepare the steak by patting it dry and seasoning with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the steak in a hot skillet for 4–5 minutes per side until cooked to your liking. Let rest before slicing.
  3. Cook the rice by heating olive oil in a pot, adding rice and garlic powder to toast lightly before adding broth or water. Cover and simmer until fluffy.
  4. Make the queso sauce in the same skillet by melting butter, cooking minced garlic, adding milk to simmer, then stirring in shredded cheeses until smooth.
  5. Assemble your dish: spoon rice onto plates, top with sliced steak and generous amounts of queso sauce. Garnish with fresh cilantro, lime wedges, avocado slices, and jalapeños.
