  • 2 tablespoons olive oil
  • Salt and pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat oven to 375°F (190°C). Rinse and pat dry the hens.
  2. Rub hens with olive oil; season with salt, pepper, garlic powder, thyme, and paprika.
  3. Sauté onions in olive oil until translucent; add celery and carrots until softened.
  4. Mix in bread crumbs, chicken broth, and optional ingredients until combined.
  5. Stuff each hen with the mixture and tie the legs if desired.
  6. Place hens in a roasting pan; pour broth around them and baste with juice.
  7. Roast for about 1 hour and 10 minutes or until juices run clear.
  8. Let rest for 10 minutes before serving.
