  • 5 pounds sweet potatoes (peeled and cut into 2-inch pieces)
  • 1 cup water
  • 2 eggs
  • ½ cup butter (melted)
  • 1 cup brown sugar
  • ½ cup heavy cream (or milk)
  • ½ cup flour
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook the sweet potatoes until tender (boil or use a slow cooker).
  2. Preheat oven to 375°F (190°C). Mash cooked sweet potatoes until smooth but slightly textured.
