  • 2 cups (260g) all-purpose flour
  • 3/4 cup (85g) natural unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1 cup (240ml) vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 cup (240ml) hot water
  • 1 cup (240ml) water
  • 1/2 cup (112g) unsalted butter
  • 1 cup (240ml) heavy whipping cream
  • 2 1/2 cups (560g) unsalted butter, room temperature
  • 10 cups (1150g) powdered sugar
  • 1/2 cup – 3/4 cup caramel sauce
  • 1/2 cup chopped pecans, toasted
  • 6 oz (1 cup | 169g) semi-sweet chocolate chips
  • 1/2 cup (180ml) heavy whipping cream

Instructions

  1. Start by making the caramel sauce: Combine sugar and water in a pan over medium-low heat until dissolved. Add butter, let boil until golden, then whisk in cream and vanilla. Cool.
  2. Preheat oven to 300°F (148°C). Grease three 8-inch cake pans and line with parchment paper.
  3. In a bowl, mix dry ingredients; then add eggs, milk, oil, and hot water until combined. Divide batter among pans and bake for 30-33 minutes.
  4. For the caramel buttercream, beat room-temperature butter, gradually adding powdered sugar and cooled caramel until smooth.
  5. Once cakes are cooled, assemble by layering with frosting and caramel sauce in between each layer.
  6. Frost the entire cake with remaining buttercream and top with chocolate ganache made from heated cream and chocolate chips.
