  • 75 g dark vegan chocolate
  • 3 cups all-purpose flour

  • 3/4 tsp baking soda
  • 1 1/2 cups plant-based milk
  • 3/4 cup neutral oil (like canola)
  • 1/4 cup white vinegar (or apple cider vinegar)
  • 1 tbsp vanilla extract
  • 75 g dark vegan chocolate (for frosting)
  • 1 cup vegan butter, room temperature
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 5 cups confectioners' sugar, sifted
  • 24 tbsp plant-based milk (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 1/4 cup canned coconut milk (for ganache)
  • 80 g dark vegan chocolate (for ganache)
  • 1/21 kg dark vegan chocolate, chopped (for decorations)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine hot coffee with chopped dark vegan chocolate until melted.
  2. In a separate bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir in the melted chocolate mixture along with plant-based milk, oil, vinegar, and vanilla until smooth.
  3. Divide batter into greased cake pans and bake for approximately 30 minutes or until a toothpick comes out clean. Let cool completely before removing from pans.
  4. For frosting, melt more dark vegan chocolate and combine with room temperature vegan butter and cocoa powder until fluffy. Gradually add confectioners’ sugar and plant-based milk to reach desired consistency.
  5. Assemble the cake by layering frosting between cooled cakes. Cover the entire cake with frosting.
  6. Prepare ganache by heating coconut milk and pouring it over chopped dark vegan chocolate; stir until smooth. Drizzle over the frosted cake.
