  • 35 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 68 whole pepperoncini peppers
  • 12 tbsp pepperoncini juice
  • 4 tbsp ghee

Instructions

  1. Pat the chuck roast dry, season generously with salt and pepper, and sear in olive oil over medium-high heat until golden brown on all sides.
  2. Deglaze the pan with beef broth, scraping up any browned bits for added flavor.
  3. In a slow cooker, place the seared roast and pour the deglazed liquid over it. Add spices, whole pepperoncini, and drizzle with ghee.
  4. Cook on low for 8-10 hours or high for 5-6 hours until fork-tender.
  5. Let rest before slicing and serve over mashed cauliflower or enjoy solo.
