  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out any excess moisture.
  3. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  4. Add the egg and vanilla extract; mix until combined.
  5. In a separate bowl, whisk together flour, oats, baking soda, baking powder, cinnamon, and salt.
  6. Gradually add dry ingredients to the wet mixture; stir until just combined.
  7. Fold in the grated zucchini and optional chocolate chips.
  8. Drop rounded balls of dough onto a lined baking sheet, spacing them apart.
  9. Bake for about 12-15 minutes or until golden brown around the edges.
