  • 1 cup medjool dates pitted
  • 1/2 cup nut butter such as almond or peanut
  • 1/4 cup coconut flour for texture
  • 1/4 teaspoon sea salt to enhance flavor

Method
 

Prepare the Mixture
  1. In a food processor, combine the pitted medjool dates, nut butter, coconut flour, and sea salt.
  2. Blend until the mixture is smooth and sticky, scraping down the sides as needed.
Shape the Caramels
  1. Line a baking dish with parchment paper.
  2. Transfer the date mixture to the dish and press it down evenly to form a flat layer.
Chill and Cut
  1. Refrigerate the mixture for about 30 minutes to firm up.
  2. Once set, remove from the dish and cut into small squares or rectangles.
