Ingredients
  

Pork and Seasoning
  • 3 pounds pork shoulder bone-in, trimmed
  • 2 teaspoons salt divided
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for searing
Braising Liquid
  • 2 cups apple cider preferably fresh
  • 1 cup chicken broth low sodium
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 2 sprigs fresh thyme or 1 teaspoon dried
Vegetables
  • 4 medium carrots peeled and cut into chunks
  • 2 stalks celery cut into chunks
  • 2 medium apples cored and sliced

Method
 

Prepare the Pork
  1. Preheat the oven to 300°F (150°C).
  2. Season the pork shoulder with salt and pepper on all sides.
Sear the Pork
  1. In a Dutch oven, heat olive oil over medium-high heat.
  2. Sear the pork shoulder until browned on all sides, about 8-10 minutes total.
Add Aromatics
  1. Remove the pork and set aside. Add onion and garlic to the pot, sautéing until softened, about 3-4 minutes.
  2. Stir in apple cider, chicken broth, and thyme, scraping up any browned bits from the bottom.
Braise the Pork
  1. Return the pork to the pot and add carrots, celery, and apples.
  2. Cover and transfer to the oven. Braise for 2-3 hours, until the pork is fork-tender.
Serve
  1. Remove the pork from the oven and let it rest for 10 minutes before slicing.
  2. Serve with the braising liquid and vegetables.
