Ingredients
  

  • 6 cups salad greens (arugula and baby spinach)
  • 1 each red apple
  • 1 each green apple
  • 1 cup walnuts (roughly chopped)
  • cup crumbled feta cheese
  • cup dried cranberries
  • 1 cup apple juice for dressing
  • 4 tablespoons apple cider vinegar or white vinegar if needed
  • 2 tablespoons honey for dressing
  • ½ teaspoon salt for dressing
  • ¼ teaspoon black pepper for dressing
  • ¼ cup oil for dressing
  • 1 cup walnut halves for candied walnuts (optional)
  • 1 tablespoon butter for candied walnuts
  • ¼ cup sugar for candied walnuts
  • ¼ teaspoon salt for candied walnuts
  • ¼ teaspoon ground cinnamon for candied walnuts

Method
 

  1. Core and chop the apples into thin slices or bite-sized chunks. In a large bowl, toss together the mixed greens, apples, walnuts, feta cheese, and dried cranberries.
  2. Whisk together the dressing ingredients—apple juice, apple cider vinegar, honey, salt, black pepper, and oil. Pour it over the salad just before serving.
  3. Toss everything together with the dressing and serve immediately while it's still crisp.
