Ingredients
  

  • ½ cup walnuts lightly toasted
  • 3 pears juicy and ripe, sliced
  • 5 oz baby arugula
  • 4 oz blue cheese crumbled
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon apple cider vinegar
  • 2 teaspoons honey
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon fine salt
  • teaspoon black pepper

Method
 

  1. Start by gathering all your ingredients together. Toast your walnuts lightly in a dry skillet over medium heat until fragrant.
  2. In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, honey, Dijon mustard, fine salt, and black pepper.
  3. In a large serving bowl, combine the baby arugula and sliced pears. Sprinkle with crumbled blue cheese and toasted walnuts on top.
  4. Drizzle your homemade dressing over the assembled salad just before serving. Toss gently to combine all ingredients.
