Bacon Jalapeño Eggrolls

Crispy eggrolls filled with a spicy mixture of bacon, cream cheese, and jalapeños, perfect for snacking or as an appetizer.

Ingredients
  

Filling
  • 8 slices bacon cooked and crumbled
  • 8 oz cream cheese softened
  • 2 medium jalapeños seeded and finely chopped
  • 1 cup shredded cheddar cheese optional
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 pkg eggroll wrappers
For frying
  • 4 cups oil for frying

Method
 

Prepare the filling
  1. In a mixing bowl, combine the crumbled bacon, softened cream cheese, chopped jalapeños, shredded cheddar cheese, garlic powder, and onion powder. Mix until well combined.
  2. Taste and adjust seasoning if necessary.
Assemble the eggrolls
  1. Lay an eggroll wrapper on a clean surface with a corner pointing towards you.
  2. Place about 2 tablespoons of the filling in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to help seal the edges.
Fry the eggrolls
  1. Heat the oil in a deep fryer or large pot to 350°F (175°C).
  2. Carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Serve
  1. Serve warm with your favorite dipping sauce, such as sweet chili sauce or ranch.

Notes

These eggrolls can be made ahead of time and frozen before frying. Just fry them straight from the freezer, adding a couple of extra minutes to the frying time.
