Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 1 tsp salt adjust to taste
  • 1 tsp black pepper adjust to taste
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ cup tomato sauce
  • 4 large flour tortillas
  • 3 tbsp spicy mayo
  • 1 cup fried rice
  • 1 cup nacho cheese sauce
  • 1 cup sour cream
  • 1 cup tortilla chips

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes until softened and translucent.
  2. Add the ground beef to the skillet, cooking it until fully browned. Season the beef with salt, smoked paprika, and oregano. Stir to combine.
  3. Pour in the tomato sauce, lower the heat, and let it simmer for 5 minutes.
  4. Lay each flour tortilla flat. Spread about 1 tablespoon of spicy mayo down the center. Add a spoonful of fried rice, drizzle with nacho cheese sauce, add sour cream, tortilla chips, and seasoned ground beef.
  5. Fold in the sides of each tortilla and roll it up tightly. Heat a non-stick skillet or griddle over medium heat, sprinkle shredded cheese on the hot surface, and grill each burrito until the cheese forms a crispy golden crust.
  6. Serve these burritos hot with extra spicy mayo on the side for dipping.
