Blueberry Monkey Bread Muffins

Ingredients
  

Muffin Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
Blueberry Filling
  • 1 cup fresh blueberries
Cinnamon Sugar Coating
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
Add Blueberries
  1. Gently fold in the fresh blueberries into the muffin batter.
Coat and Bake
  1. In a separate bowl, mix the sugar and cinnamon for the coating.
  2. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  3. Sprinkle the cinnamon sugar mixture on top of each muffin.
  4. Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
Cool and Serve
  1. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
  2. Serve warm or at room temperature.
