Ingredients
  

Chicken and Marinade
  • 1 kg chicken thighs boneless and skinless
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Coconut Sauce
  • 1 can coconut milk 400ml
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 cup fresh cilantro chopped for garnish

Method
 

Marinate the Chicken
  1. In a bowl, combine chicken thighs, lime juice, garlic powder, salt, and black pepper. Mix well and let marinate for at least 15 minutes.
Cook the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the marinated chicken and cook for about 5-7 minutes on each side until browned and cooked through.
Prepare the Coconut Sauce
  1. In the same skillet, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  2. Pour in the coconut milk, paprika, and cumin. Stir to combine and let simmer for about 10 minutes.
Combine and Serve
  1. Return the cooked chicken to the skillet, coating it with the coconut sauce. Simmer for an additional 5 minutes.
  2. Garnish with fresh cilantro before serving. Enjoy with rice or bread.
