Ingredients
  

Rice and Eggs
  • 3 cups cooked rice preferably day-old
  • 2 large eggs beaten
Vegetables
  • 1 cup peas frozen or fresh
  • 1 cup carrots diced
  • 1 cup green onions chopped
Sauces and Seasonings
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon sesame oil for flavor
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste

Method
 

Prepare the Ingredients
  1. Chop the green onions, carrots, and prepare the peas.
  2. Beat the eggs in a bowl and set aside.
Cook the Eggs
  1. Heat a wok over medium-high heat and add a little oil.
  2. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside.
Stir-Fry the Vegetables
  1. In the same wok, add more oil if needed and stir-fry the carrots and peas for about 3-4 minutes.
  2. Add the cooked rice and stir well to combine.
Combine Everything
  1. Add the scrambled eggs back to the wok along with soy sauce, sesame oil, salt, and pepper.
  2. Toss everything together until heated through and well mixed.
  3. Garnish with chopped green onions before serving.
