In a mixing bowl, combine shredded cooked chicken, cream cheese, buffalo sauce, shredded cheese, and green onions. Mix until well incorporated.
Take an egg roll wrapper and place about two tablespoons of the filling in the center. Fold up the bottom corner over the filling, then fold in the sides and roll it tightly. Seal the top edge with a dab of water.
In a deep skillet or frying pan, heat oil over medium heat. Once hot, gently place each egg roll in the oil and fry until golden brown and crispy on all sides—about 3–4 minutes per side.
Once fried, transfer your egg rolls to a paper towel-lined plate to drain any excess oil. Serve them warm with your favorite dipping sauce.
