Caramelized Leek and Mushroom Gruyere Pasta

Ingredients
  

Pasta
  • 12 oz Fusilli pasta or any pasta of choice
Vegetables
  • 2 medium Leeks sliced and cleaned
  • 8 oz Mushrooms sliced, preferably cremini or button
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil for sautéing
  • 1 tbsp Butter for sautéing
Cheese
  • 1 cup Gruyere cheese shredded
Seasoning
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 1/4 cup Heavy cream optional for creaminess

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and set aside.
Caramelize the Leeks and Mushrooms
  1. In a skillet, heat the olive oil and butter over medium heat. Add the sliced leeks and cook for about 5 minutes until they start to soften.
  2. Add the sliced mushrooms and continue to cook for another 10-15 minutes, stirring occasionally, until the leeks are caramelized and the mushrooms are golden brown.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Combine and Serve
  1. Add the cooked pasta to the skillet with the leeks and mushrooms. Stir to combine.
  2. If using, add the heavy cream and mix well. Season with salt and black pepper to taste.
  3. Remove from heat and stir in the shredded Gruyere cheese until melted and combined.
  4. Serve immediately, garnished with additional cheese if desired.

Notes
