Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk dairy or non-dairy
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced jalapeños fresh or pickled

Method
 

  1. Preheat your waffle iron according to its manufacturer’s instructions.
  2. In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the shredded sharp cheddar cheese and diced jalapeños until evenly distributed.
  6. Spray your preheated waffle iron lightly with non-stick cooking spray, pour an appropriate amount of batter onto the iron, and cook until golden brown and crispy.
